Preparation

  • Start by placing the chicken pieces at the bottom of your crockpot.
  • Pour in the pineapple chunks along with their juice.
  • In a small bowl, combine the brown sugar, soy sauce, and minced garlic; whisk well and pour over the chicken and pineapple.
  • Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours.
  • About 30 minutes before serving, mix the cornstarch with water until smooth, then stir into the cooking liquid.
  • If using, toss in sliced red bell peppers.
  • Serve plated over rice or noodles and drizzle with extra sauce.
