Preparation

  • Place the chicken breasts neatly at the bottom of your crockpot.
  • In a small bowl, mix together the melted butter, minced garlic, chopped onion, Italian seasoning, salt, and pepper.

Cooking

  • Pour the savory mixture over the chicken, followed by chicken broth, heavy cream, and milk.
  • Cover the crockpot and cook on low for 3½ to 4 hours or high for 2 to 2½ hours.
  • Once cooked, remove the chicken and shred it using two forks, then return to crockpot.
  • Stir in the dry penne pasta, covering it well with the chicken and sauce.
  • Cook on high for an additional 20 to 25 minutes, or until the pasta is tender.
  • Stir in the grated Parmesan cheese until it melts completely, creating a creamy coating.

Serving

  • Serve the dish immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
