Preparation

  • Begin by spraying a 6–7-quart slow cooker with nonstick cooking spray to ensure easy cleanup.
  • Place the chicken breasts directly into the slow cooker. Sprinkle them with minced garlic, kosher salt, black pepper, onion powder, and Italian seasoning.
  • In a separate bowl, combine the cream of chicken soup and the undrained diced tomatoes with green chiles. Stir until well-mixed, then pour the mixture evenly over the chicken.
  • Cover the slow cooker and cook on high for 4 hours, or on low for 6 hours.
  • Once the cooking time is up, shred the chicken using two forks and return it to the slow cooker.
  • Gently fold in the shredded Colby jack cheese and the cubed cream cheese. Cook on high for an additional 30 minutes, or until the cheeses are melted and incorporated.
  • Meanwhile, cook the spaghetti according to the package directions. Once ready, drain and stir the pasta into the slow cooker until all the ingredients are coated with that cheesy goodness.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For an added nutritional boost, consider including steamed vegetables like spinach or broccoli. Make it spicy by adding sliced jalapeños into the slow cooker along with the other ingredients. To enhance the flavors, marinate the chicken with Italian dressing a few hours prior to cooking. For a lower-carb option, substitute regular spaghetti with zucchini noodles or spaghetti squash.
