Instructions
 

Preparation

  • Preheat your oven to 220 °C (425 °F).
  • In a shallow bowl, mix the flour with salt, pepper, garlic powder, and paprika.
  • In another bowl, whisk together the eggs and lemon juice until combined.
  • In a third bowl, mix the panko breadcrumbs with most of the grated Parmesan and lemon zest.
  • Pat the chicken tenders dry. Dredge each tender in the seasoned flour mixture, dip into the egg mixture, and then roll in the panko mixture.
  • Place the coated chicken tenders on a baking sheet and drizzle with olive oil or melted butter.

Cooking

  • Bake for 18-22 minutes, flipping halfway, until golden brown and cooked through.
  • If desired, add reserved Parmesan during the last 2 minutes of baking.

Serving

  • Garnish with freshly chopped parsley and serve with lemon wedges on the side.

Notes

Ensure your oven is preheated before baking for an even crispy finish. Press the panko firmly into the chicken for extra crunch. Avoid skimping on space when placing tenders on the baking sheet.
