  • 4 pieces boneless, skinless chicken breasts tender and juicy
  • 4 tablespoons olive oil rich and flavorful
  • 4 cloves garlic, minced aromatic and zesty
  • 1 cup cherry tomatoes, halved sweet and vibrant
  • 1 cup fresh spinach crisp and nutrient-packed
  • 1 cup heavy cream luxuriously creamy
  • 0.5 cup grated Parmesan cheese nutty and savory
  • 1 teaspoon Italian seasoning fragrant and herbal
  • to taste Salt and pepper for perfect seasoning
  • a few Fresh basil leaves for garnish, adding a pop of color and freshness

Instructions
 

Preparation

  • Season the chicken breasts generously on both sides with salt, pepper, and Italian seasoning.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sear the chicken for 6-7 minutes on each side until golden brown. Remove the chicken and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • Add halved cherry tomatoes and cook for 2-3 minutes until softened.
  • Then, pour in the heavy cream and grated Parmesan cheese, and simmer for 3-4 minutes until the sauce thickens.
  • Introduce fresh spinach and let it wilt into the sauce. Return the chicken to the skillet, spoon the sauce over it, and simmer for an additional 2 minutes.
  • Serve with a drizzle of sauce on top and garnish with fresh basil leaves.

Notes

Serve with pasta, rice, or a fresh salad. For a delightful meal, consider pairing it with garlic bread or sparkling lemon water.
