Preparation

  • Rinse the wild rice under cold water until the water runs clear, ensuring that it’s clean and ready for cooking.
  • In a large pot, melt the butter over medium heat. Add the sliced mushrooms and sauté until they turn golden brown and their natural juices are released.
  • Add the finely chopped onion, diced carrots, and sliced celery into the pot. Cook this aromatic mixture until the vegetables soften and start to meld together.
  • Stir in the minced garlic and fresh herbs, cooking for another minute until fragrant.
  • If you prefer a thicker soup, sprinkle flour over the vegetable mix and cook for 1-2 minutes.

Cooking

  • Pour in the chicken broth and add the rinsed wild rice. Bring everything to a boil, then reduce the heat to a simmer. Cook until the wild rice is tender, about 30-40 minutes.
  • If using raw chicken, add it during the simmering process. If the chicken is pre-cooked, wait to add it until near the end.

Finishing Touches

  • Stir in the heavy cream, warming the soup without boiling. Season generously with salt and pepper to taste.
  • Serve warm, garnished with fresh herbs.

Notes

For storing, refrigerate for up to 4 days or freeze for up to 3 months. Consider adding other vegetables like spinach for nutritional benefits. Leftover rotisserie chicken can enhance the flavor.
