Creamy Beef and Potato Casserole

  • 2.5 pounds Yukon gold potatoes, washed and sliced into ⅛-inch rounds For a tender and creamy texture.

Beef Layer

  • 2 pounds lean ground beef Perfectly seasoned and browned.

Creamy Base

  • 10.5 ounces cream of mushroom soup Provides a rich and creamy base.
  • 1 cup half and half Enhances the dish’s creaminess.
  • 1 tablespoon onion powder Amplifies flavor.
  • 1.5 teaspoons kosher salt For seasoning.
  • 1 teaspoon freshly cracked black pepper For a subtle kick.

Cheese Topping

  • 3 cups freshly shredded Colby Jack cheese Divided into ¾ cup, ¾ cup, and 1½ cups.

Preparation

  • Slice the Yukon gold potatoes into ⅛-inch thick rounds. Place them in a bowl of cold water to prevent browning until ready to use.
  • Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with non-stick spray.

Cooking the Beef

  • In a large saucepan or Dutch oven, cook the lean ground beef with the onion and garlic over medium heat until browned. Drain excess fat.

Combine Ingredients

  • In a separate bowl, mix the cream of mushroom soup, half and half, onion powder, salt, and pepper until well blended.

Layering

  • In the prepared baking dish, layer one-third of the sliced potatoes, followed by one-third of the beef mixture, ¾ cup of cheese, and one-third of the soup mixture. Repeat twice, finishing with the remaining potatoes, beef, soup mixture, and top with 1½ cups of cheese.

Baking

  • Cover the dish with aluminum foil and bake for 1 hour and 10 minutes.
  • Remove foil and bake an additional 20 minutes until golden crust forms and cheese is bubbly.

Serving

  • Let the casserole rest for 15 minutes before serving. This helps maintain structure for slicing.
