Preparation

  • Preheat your oven to 350°F (175°C) while you prepare your loaf pan.
  • In a mixing bowl, combine the mashed bananas and melted butter. Mix until well combined.
  • Stir in the brown sugar, beaten egg, and vanilla extract. Mix until smooth.
  • Sprinkle baking soda and salt over the mixture. Fold in the flour gently until just incorporated.
  • Fold in walnuts and cinnamon if using.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Place the loaf pan in the oven and bake for 60-65 minutes. Check with a toothpick for doneness.
  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

For best results, use overripe bananas. Allow the bread to cool completely before slicing for firmer slices.
