Ingredients
  

For the Cake

  • 1 box white or vanilla cake mix Base for moist and airy cake layers.
  • 1 ounce red food coloring For vibrant red layer.
  • 1 ounce green food coloring For cheerful green layer.
  • 1 teaspoon vanilla extract Enhances sweetness and flavor.
  • as needed water, oil, and eggs As called for on the cake mix box.

For the Assembly and Decoration

  • 2 cups buttercream frosting For layering and frosting.
  • 1/4 teaspoon peppermint extract Optional for a minty twist.
  • 16 ounces Candyquick chocolate For dipping the mini cakes.
  • 2 tablespoons shortening If using regular chocolate for coating.

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your baking pans by lining them with parchment paper and spraying them with non-stick spray.
  • Follow the instructions on the cake mix box to prepare the batter. Once mixed, divide it equally into two separate bowls.

Baking the Cakes

  • Add the red food coloring to one bowl and the green to the other. Stir until the colors are vibrant and well-combined.
  • Pour the red batter into one prepared pan and the green batter into the other. Bake for 12-15 minutes.
  • Gently tap the pans at the 6-minute mark to check on your cakes.
  • Once baked, allow them to cool completely on wire racks.

Assembling the Cakes

  • Spread a layer of buttercream frosting over the green cake, then place the red cake on top, frosting side down.
  • Chill the cake in the refrigerator for about 30 minutes.
  • Cut mini cakes using a round cutter and place them on a wire rack over a parchment-lined baking sheet.

Decorating the Cakes

  • Melt the Candyquick chocolate as per the package instructions. If using regular chocolate, mix in shortening.
  • Pour the melted chocolate over each mini cake, allowing them to set until firm.

Notes

Tips: Allow cakes to cool completely before frosting. You can also use flavored extracts or sprinkles for variation.
