Preparation

  • Preheat your oven to 350°F (175°C). Grease a springform pan.
  • In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter until well blended. Press firmly into the bottom of the prepared springform pan.
  • Bake for 10 minutes, then let it cool.

Making the Filling

  • In a large bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually incorporate sour cream and sugar, mixing thoroughly.
  • Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.
  • Stir in ground cinnamon.

Baking

  • Pour the creamy mixture over the cooled crust and smooth the top.
  • Bake in the oven for about 60 minutes, or until the center looks slightly jiggly but set.
  • Turn off the oven and crack the door open, allowing the cheesecake to cool gently for an hour.
  • Transfer to the refrigerator and chill for at least 4 hours or overnight.
