Ginger Sesame Vinaigrette

  • 2 tablespoons sesame oil Rich and aromatic.
  • 3 tablespoons rice vinegar Brightens the salad.
  • 2 tablespoons soy sauce (or tamari) Adds umami flavor.
  • 1 tablespoon fresh ginger, grated Adds zesty kick.
  • 1 tablespoon honey (or maple syrup) Balances flavors.
  • 1 clove garlic, minced Infuses dressing with warmth.
  • 1 tablespoon sesame seeds, for garnish Adds crunch.

Instructions
 

Preparation

  • In a large mixing bowl, combine the chickpeas, edamame, diced red bell pepper, shredded carrot, and thinly sliced green onions. Toss gently.
  • In a smaller bowl, whisk together the sesame oil, rice vinegar, soy sauce or tamari, grated ginger, honey or maple syrup, and minced garlic.
  • Pour the vinaigrette over the salad mixture and toss gently to coat. Top with sesame seeds and serve immediately, or chill for 30 minutes.

Notes

For added flavor, incorporate fresh herbs like cilantro or parsley. Adjust spiciness with red pepper flakes or sriracha. The salad can be prepped in advance; just keep dressing separate until serving.
