  • 2.5 cups elbow macaroni perfectly al dente for ideal texture
  • 1.5 cups chicken broth adding depth and moisture
  • 10 oz can Rotel tomatoes, undrained for a zesty kick
  • 8 oz can tomato sauce enriching the dish with vibrant flavors
  • 1 tablespoon minced garlic provides warm undertones
  • 2 cups shredded Colby Jack cheese the star of the show, melting into gooey perfection
  • 0.5 cup whole milk lending creaminess
  • 0.5 teaspoon salt to enhance all flavors
  • 0.5 teaspoon black pepper to enhance all flavors
  • 2 teaspoons chili powder for a mild smokiness

Instructions
 

Preparation

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed chicken and chopped onion. Season generously with salt, black pepper, chili powder, cumin, and dried cilantro. Sauté for about 6-8 minutes, until the chicken is cooked through and the onions become translucent.
  • Once the chicken and onions are perfectly cooked, stir in 1 tablespoon of minced garlic. Then, add 2½ cups of elbow macaroni, 1½ cups of chicken broth, the undrained Rotel tomatoes, and the 8 oz can of tomato sauce. Mix everything well.
  • Increase the heat and bring the mixture to a rolling boil, stirring occasionally to prevent sticking.
  • Once boiling, reduce the heat to medium-low, cover the skillet, and let it simmer for about 12 minutes. Stir halfway through to ensure even cooking.
  • Once the pasta is tender, remove the skillet from the heat. Stir in 2 cups of shredded Colby Jack cheese and ½ cup of whole milk. Let it sit for 2-3 minutes to allow the cheese to melt.
  • Serve hot and garnish with fresh cilantro.

Notes

For healthier alternatives, use whole wheat macaroni, low-fat cheese, or plant-based cheese. Consider adding more veggies like bell peppers or corn.
