Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and prepare an 8x8-inch baking pan by greasing it or lining it with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture resembles wet sand.
  • Press the mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes until it’s set and lightly golden. Allow to cool completely.

Filling

  • In a large bowl, beat the softened cream cheese and ricotta until smooth and creamy.
  • Gradually incorporate the powdered sugar, mixing until no lumps remain.
  • Add the eggs one at a time, ensuring each one is thoroughly mixed before adding the next.
  • Add the vanilla extract, cinnamon, and optional orange zest.
  • Gently fold in the mini chocolate chips, and pour the mixture over the cooled crust.

Baking

  • Bake in the preheated oven for 30-35 minutes until the edges are set, and the center is slightly jiggly.
  • Cool at room temperature for about an hour, then transfer to the refrigerator to chill for at least 4 hours, preferably overnight.

Serving

  • Cut the Cannoli Cheesecake Bars into squares and optionally top with extra chocolate chips.
