Instructions
 

Preparation

  • Rinse the sushi rice under cold running water until the water runs clear to eliminate excess starch.
  • In a saucepan, combine the rinsed rice and water. Cook according to package instructions until tender and sticky.
  • Transfer the cooked rice to a bowl and while it’s still warm, gently fold in the rice vinegar, sugar, and salt. Allow to cool to room temperature.
  • Thinly slice the cucumber and dice the ripe avocado.
  • Shred or separate the imitation crab into bite-sized pieces.

Assembly

  • Divide the seasoned sushi rice into individual bowls.
  • Top each bowl with portions of cucumber, avocado, and imitation crab.
  • Drizzle each bowl with low-sodium soy sauce and top with Sriracha if desired.

Notes

For a quick meal, consider using pre-cooked rice. Rinse the rice thoroughly for optimal sushi texture. Store any leftovers in an airtight container in the fridge for up to 24 hours, but avoid storing avocados to prevent browning.
