Preparation

  • In a mason jar or a bowl, add the milk, chia seeds, maple syrup, vanilla extract, and the mashed blueberries. Stir well to ensure the chia seeds are evenly distributed throughout the mixture.
  • Cover the jar or bowl tightly with a lid or plastic wrap and place it in the refrigerator. Chill for at least 3 hours, or overnight if you prefer a thicker pudding.
  • When ready, stir the pudding well to redistribute settled ingredients.
  • Serve in bowls or jars topped with extra fresh blueberries.

Notes

Consider blending the blueberries with the liquid for a smoother consistency. For extra texture, toast some coconut flakes or nuts to sprinkle on top just before serving. This pudding can also be made with various fruits.
