Instructions
 

Preparation

  • In a large Dutch oven, heat the olive oil over medium-high heat.
  • Add the seasoned beef stew meat and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.
  • Add the onions, celery, carrots, and mushrooms to the pot without cleaning it. Sauté for 5-6 minutes until softened.
  • Stir in the garlic, thyme, and tomato paste, cooking for about a minute until fragrant.
  • Return the seared beef to the pot, add beef broth and bay leaves, stir, and bring to a gentle simmer.

Cooking

  • Reduce heat to low, cover, and let it simmer for 45 minutes.
  • Add the rinsed pearl barley, cover, and continue to simmer for another 45-60 minutes until the beef and barley are tender.
  • Remove bay leaves, adjust seasoning as needed, and garnish with fresh parsley before serving.

Notes

For best results, allow the beef to develop a nice crust during searing. Adjust seasoning towards the end of cooking as flavors intensify during simmering. Fresh herbs can enhance flavor just before serving.
