Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a shallow bowl, combine panko breadcrumbs with olive oil, mixing until all breadcrumbs are coated.
  • Set up a dredging station: place seasoned flour in one bowl, beaten eggs in another, and the prepared panko in a third.
  • Dredge each piece of salmon in the seasoned flour, dip it in the eggs, then coat it thoroughly with the panko breadcrumbs.
  • Lay each salmon piece on the prepared baking sheet.

Cooking

  • Bake for 12-15 minutes until the salmon bites are golden brown and cooked through.
  • While the salmon is baking, mix together mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl to create a flavorful drizzle.

Assembly

  • To assemble your bowls, start by adding cooked jasmine rice to serving dishes, then layer in the freshly shredded cabbage.
  • Top each bowl with the crispy salmon bites and drizzle generously with the prepared sauce.
  • Complete the bowl with slices of avocado, chopped green onions, and fresh cilantro. Serve while hot.

Notes

For an added crunch, drizzle a touch of sesame oil over the cabbage. Experiment with different fish varieties if you're feeling adventurous; tilapia or cod could work well. Thoroughly dry the salmon before dredging it to help the coating adhere better. For a gluten-free option, substitute the all-purpose flour with cornstarch and choose gluten-free panko breadcrumbs.
