Ingredients
  

For the Chicken and Sauce

  • 1 lb boneless, skinless chicken breasts Tender, juicy chicken pieces.
  • 1 cup panko breadcrumbs Provides a crispy coating.
  • 1/2 cup mayonnaise Base of the sauce.
  • 1/4 cup sweet chili sauce Adds sweetness and heat.
  • 2 tbsp sriracha Provides a zesty kick.

For the Bowl

  • 2 cups cooked rice (jasmine preferred) Fluffy and aromatic.
  • 1 cup mixed vegetables (cucumbers, carrots, bell peppers) Adds a crunchy contrast.
  • 2-3 pieces green onions, chopped Optional garnish.
  • to taste fresh cilantro, for garnish Optional for freshness.

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized pieces and season them with salt and pepper.
  • In one bowl, place the panko breadcrumbs. In another bowl, mix together the mayonnaise, sweet chili sauce, and sriracha until creamy.
  • Dip each piece of chicken into the sauce mixture, allowing any excess to drip off, then roll them in the panko breadcrumbs.

Cooking

  • Heat oil in a frying pan over medium heat. Fry the chicken pieces for 3-4 minutes on each side, or until golden brown and cooked through.
  • To serve, scoop cooked rice into bowls, top with the crispy chicken, add mixed vegetables, and drizzle with any reserved sauce.
  • Garnish with chopped green onions and cilantro.

Notes

For extra crunch, double-dip your chicken before frying. To make it healthier, consider baking the chicken instead of frying. Experiment with vegetables for variety.
