Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, garlic powder, onion powder, and salt until combined.
  • Cut in the chilled cubed butter until the mixture resembles coarse breadcrumbs.
  • Fold in the shredded provolone cheese.
  • Gradually add the buttermilk, stirring until just combined; be careful not to overmix.
  • Turn the dough out onto a floured surface and gently knead it a couple of times until it comes together.
  • Roll the dough out to about 1-inch thick.
  • Cut out biscuits and place them on the prepared baking sheet.

Filling and Baking

  • In a small bowl, combine the shredded roast beef, beef broth, and chopped thyme, mixing well.
  • Spoon a small amount of the beef mixture onto each biscuit.
  • Fold the biscuit over to cover the filling and pinch the edges to seal.
  • Bake for 15-18 minutes, or until golden brown.
  • Allow to cool slightly before serving with extra beef broth for dipping.

Notes

For extra flavor, add grated Parmesan cheese to the biscuit dough. Incorporate sautéed onions or mushrooms into the filling for a delightful texture and depth. Serve warm and consider garnishing with fresh thyme sprigs.
