Instructions
 

Preparation

  • Heat the oil in a large, heavy-bottomed pot over medium heat.
  • Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Toss in the sliced carrots and chopped celery, cooking for another 3 minutes.
  • Add the minced garlic, ground turmeric, grated ginger, cumin, and black pepper, cooking for 30 seconds.
  • Gently place the chicken pieces into the pot, then pour in the chicken broth and water until everything is just covered.
  • Add the bay leaf and bring the mixture to a gentle boil.

Cooking

  • Reduce heat to low and let the soup simmer for 45-60 minutes, or until the chicken is tender.
  • Remove the chicken from the pot, shred the meat, and return it to the pot.
  • Stir in the fresh lemon juice and season with salt to taste.
  • Pour in the coconut milk and add the chopped leafy greens, stirring to combine.
  • Let the soup simmer for another 2-3 minutes.
  • Remove the bay leaf and taste the soup, adjusting the seasoning as needed.

Serving

  • Garnish with fresh herbs before serving hot.

Notes

For enhanced flavor, consider adding a dash of cayenne pepper. You can use rotisserie chicken for a quicker option. Storing tips: refrigerate for up to 4 days or freeze for up to 3 months.
